Breakfast Burritos

burritoBreak free from the mediocrity of breakfast food and enjoy this healthy and very delicious recipe that the whole family will love.  It is guaranteed to be a favorite!

Breakfast Burritos

1 1-pound container firm tofu, drained*

1 medium onion, diced

2 large cloves garlic, minced

1 each, medium red & green pepper, diced

2 large portabella mushroom caps, diced

4 vegetarian sausage patties

2 ripe avocados, sliced

4 burrito size tortilla shells, warmed

Cheddar flavored Veggie Shreds™ cheese, if desired

Salsa, if desired

1 jalapeño pepper, diced, if desired

Olive oil

Mrs. Dash Table Blend seasoning

Drain tofu on paper towels for at least 15 minutes to remove excess water. Cut in half widthwise and then into strips lengthwise and set aside. In a non-stick skillet, sauté the onion, garlic, peppers and mushrooms in olive oil until tender. Remove from skillet and set aside. Cook the sausage according to package directions. Remove from skillet and cut patties into strips or dices and set aside. In the same skillet used to cook veggies and sausage, add 1 teaspoon of oil and tofu. Lay the strips of tofu in the skillet so that they can brown. Sprinkle the tofu with Mrs. Dash. Once the tofu has browned, use a knife and fork to cut the tofu into small dices. The consistency of the tofu should be similar to scrambled eggs. Return the veggies and sausage to the skillet with the scrambled tofu for 1 minute then remove from heat.

Begin assembling the burritos by taking a warm tortilla shell and placing 2 slices of avocado, the tofu/veggie mixture and sausage inside. If you desire, you can also place the shredded cheese, jalapeno and salsa inside. Following the instructions on the tortilla shell package, fold tightly into a burrito. Enjoy!

*You may substitute 4 scrambled eggs for the tofu.
